Grilled potato wedges

This tasty side dish or snack is a great way to use up potatoes.

Prep/Cook time: 10-20 minutes
Dish full of potato wedges with melted cheese

Ingredients

4 potatoes
No need to peel, just give them a good wash!
2 little gem lettuces, cut into quarters
2 ripe plum tomatoes
Or any tomatoes you have that need using up
1 clove garlic, peeled and crushed
Half a squeezed lemon
Your fruit will last three times longer if stored in the fridge!
3 tbsp olive oil
Salt and pepper

Recipe

  1. Place the potatoes into cold salted water and simmer gently until cooked. Leave to cool and then drain.

  2. Cut each potato into 6 wedges and brush with some olive oil.

  3. Grill over high heat, when they are well marked, set them aside and keep warm.

  4. To make the dressing, place all of the ingredients apart from the lettuce in a blender and blitz until smooth

  5. Strain through a sieve and drizzle over the lettuce. Serve with the warm grilled potatoes.
