Muffin tin potato croquettes

This delicious recipe can be made using any type of leftover mashed root vegetable, and if you don't have any chives, try using a mixture of finely chopped onions and leeks.

Round golden and crisp potato croquettes served on a plate

Ingredients

2 cups leftover mashed potato or any mashed root vegetable
You could use carrots, parsnips or sweet potatoes.
1 egg
⅓ cup grated mature cheddar cheese
2 tbsp chopped chives
Homemade breadcrumbs
Olive oil spray (or use a pastry brush to apply bottled oil sparingly)
Salt and pepper to taste

Recipe

  1. Preheat oven to 200°C. 

  2. Combine the mashed potato, egg, grated cheese and chives well. Season with salt and pepper.

  3. Grease a standard muffin tin using olive oil spray.

  4. Shape the mixture into croquettes and roll in breadcrumbs.

  5. Place croquettes into the muffin tin and spray tops with olive oil spray.

  6. Cook in the oven for 16-20 minutes or until golden.

  7. Serve with sour cream and chives.

  8. Remember to freeze any portions you don’t eat this time to save them from going in the bin. A great time saver for a simple meal another day when you may be busy.

    Defrost your frozen portions in the fridge and use within 24 hours, or in a microwave on 'defrost' directly before use.
