Leftover chocolate fridge cake

This easy to make fridge cake is a great way to use up leftover chocolate Easter eggs, and makes a wonderful afternoon treat!

You can also use any other plain type of biscuit, and you can use up any mixture of nuts or dried fruit you might have sitting in your kitchen cupboards.

Prep/Cook time: 10-20 minutes
Thick triangles of refrigerated chocolate cake mixed with digestive biscuit and marshmallows

Ingredients

300g broken easter eggs - can be mix of dark, white or plain chocolate
250g digestive biscuits
Or any other plain type of biscuit.
125g butter
150g golden syrup
75g raisins
Use up any mixture of nuts or dried fruit you have.
75g mixed nuts, roughly chopped
To decorate: a mixture of leftover Easter egg treats

Recipe

  1. Use parchment paper to line a rectangular dish or tin, leaving extra hanging over the side and then set aside.

  2. Next, place the biscuits in a bag and crush them with a rolling pin and then set aside.

  3. Place a heatproof bowl over a pan of simmering water. Add the broken chocolate, golden syrup and butter. Carefully stir until they have melted together. Remove the bowl from the heat.

  4. Add in the broken biscuits, raisins and the chopped nuts. Stir well to completely coat everything.

  5. Transfer to the paper-lined dish or tin, using a wooden spoon to push the mixture into all the corners.

  6. Sprinkle sweeties over the top before placing in a fridge to cool for 2-3 hours.

  7. Using the edges of the parchment paper, lift and transfer to a board and cut into slices. Serve and enjoy!

  8. Remember to freeze any portions you don’t eat this time to save them from going in the bin. A great time saver for a simple meal another day when you may be busy.

    Defrost your frozen portions in the fridge and use within 24 hours, or in a microwave on 'defrost' directly before use.
